  • Raw Eggplant, Avocado Salad

    I know, you want to grill your eggplant.

    That’s cool. Just don’t be afraid to eat it raw once in a while.

    Because of its high fiber content, eggplant has been found helpful in the treatment of colon cancer (make sure to eat the skin!). The fiber in eggplant also contributes to a more “full” feeling for a longer period of time, a good choice for those interested in losing weight. This wonderful veggie is high in water content as well, a great way to keep your hair and skin hydrated.

    Chop 1 avocado, 1 eggplant, 1/4 red onion, and a handful of cherry tomatoes. Add to a mixing bowl and toss with the juice of 1 lemon and a few tbsp olive oil.
